PICKLES ! That's right easy pickled vegetables that make a delicious side for any meat or as garnish
This is a quick easy pickling recipe for those who want vegetables of your choice for a quick side or garnish . I use Xylitol rather than sugar and the results are great ! Oh try adding Fennel as one of your vegetables delicious !
Low Carb / Keto quick pickled vegetables
Ingredients (for one quart of pickles)
Assorted vegetables, cauliflower, onions, radishes, peppers, fennel bulb, cucumbers, green beans, carrots or whatever you would like. Cut into bit sized pieces.
1- Cup white wine vinegar or any vinegar of your choice.
½ Cup Xylitol
2- Cups water
2- Tablespoons of kosher salt
2- 3 Sprigs of fresh Thyme
2 -3 garlic cloves slightly crushed
6 -8 whole pepper corns
1- Teaspoon whole mustard seeds
Place vegetables into a clean lidded jar packed tightly, leaving some space at the top for the thyme, garlic and bay leaf.
Combine other ingredients and bring to a boil dissolving the salt and xylitol.
Remove from heat and let steep for five minutes or so.
While still hot carefully pour pickling liquid over the vegetables , putting some of the thyme , bay leaf, garlic , and other ingredients into the jar with the vegetables , top off and seal .
Place on the fridge till cool or overnight
