Sabayon is a dessert Tour de Force . Egg yolks cooked with wine ,cream and lemon juice and zest , sweetened with Xylitol served over fresh berries is a perfect end to a great meal . I personally like to have it with a Brut Champaign
Low Carb Summer Berries with Lemon Sabayon
· 3/4 cup dry white wine
· 1/4 cup Xylitol
· 8 egg yolks
· 16 ounces blackberries or 16 ounces of mixed berries
· 1 lemon zested
· 2 Tbs heavy cream
· 1 Tbs lemon juice
· 1 bunch fresh mint sprigs ( optional )
Fill a small pot with 2 inches of water. Bring to a simmer.
In a metal bowl large enough to fit over pot, whisk together wine and xylitol.
Add in egg yolks, lemon zest and lemon juice whisking constantly over simmering water until mixture is frothy and thickens,about 5 minutes. (Temperature should reach 165 degrees .) Be careful not to scramble yolks.
In a large bowl, toss together berries with a Tbs of Xylitol and a Tbs of lemon juice and let macerate for 30 minutes Distribute among 6 glasses. Spoon sabayon over berries. Garnish with mint sprigs . Serve warm or chilled.
