Low Carb Slow Roasted Plum Tomatoes .5 net carbs.

Slow roasting brings out the natural sweetness of these otherwise ordinary tomatoes and the caramelization imparts a rich flavor with a hint of smokiness , The fresh Thyme , cracked pepper and garnish of fleur de Sel makes them pop with flavor when you bite into one .

Low Carb / Keto Slow Roasted Plum Tomatoes.

Serving size two tomatoes per person.


Plum Tomatoes, halved and seeded.

Extra Virgin Olive Oil.

Balsamic vinegar.

Fresh Thyme leaves.

Fresh cracked pepper.

Fleur de Sel.


Pre heat oven to 200 degrees.

Rub Tomatoes inside and out with olive oil, lightly salt, and arrange on a baking sheet.

Slow roast for 1 hour or till tender and concentrated.

After 1 hour turn on broiler to caramelize the top of tomatoes (about 5 minutes +/-)

Remove to serving dish garnish each tomato with a few time leaves, and sparingly drizzle with the Balsamic vinegar or if you want use Red Wine vinegar for less carbs.
