Low Carb / Keto Wine poached Fish Filets with Tomato Mushroom and Herbed Cream Sauce . 7 net Carbs

I grew watching " The French Chef "with Julia Child and its from that show that I first became acquainted this dish . This is my rendition of this Classic French recipe ,simple but elegant and of course delicious , Impress your friends and family with this timeless classic. Bon Appetite !


Low Carb Wine poached Fish Filets with Tomato Mushroom and Herbed Cream Sauce

Ingredients

2- Lbs. Sole, Flounder or any non-oily white fish fillets

2- Cloves minced Garlic

8- Oz Thinly sliced White Mushrooms

2- Tbs minced fresh Parsley

1- Tbs minced fresh Basil

2- Tbs Finley minced Shallots or Scallions

½ Cup dry White Wine

1- Cup Fish Stock or Clam juice

½-Cup Heavy Cream or as needed.

1-12 oz. can low sodium Petite Diced Tomatoes

1-Tbs Lemon juice

1-Tbs Butter

Cooking spray “Olive Oil “

Preparation

Pre heat oven to 350 degrees.

Rub a 9 x12 baking dish with butter inside, scatter half the minced shallots and garlic across the bottom.

Place the fish filets across the bottom allowing them to overlap till the fish covers the bottom of the dish evenly.

Scatter remaining shallots, garlic, basil and half the parsley over the fish filets sprinkle lemon juice overall.

Lightly salt and pepper

Place Mushrooms evenly over fish and spray with olive oil

Add Wine, then stock till the liquid comes up to the mushrooms and cover with wax paper pressing down to contact the fish and mushrooms

Place in the center of the oven and bake till the fish goes from translucent to a milky white 15 to 20 minutes

Remove from oven and using a spatula gently remove fish and mushrooms to warm plate cover and keep warm

Pour poaching liquid into a sauce pan and reduce by half

Add cream and tomatoes and simmer till a nice sauce develops, taste for seasoning, add salt and pepper as needed.

Stir in basil.

Place fish and mushrooms onto a serving platter, pour any collected juices into the sauce and incorporate

Spoon sauce over fish and mushrooms top with remaining parsley and serve.
