Low Carb/ Keto Leek and Cauliflower Soup. 6 net carbs per serving

Leek and Potato soup is one of life's simple pleasures . But a carb nightmare . So this replacement will become a low carb classic that will make you forget about that other soup I promise .

Silky and delicious this soup is a keeper served hot with sautéed Leek tops or cold with a dollop of crème fresh and chopped chives as a replacement for Vichyssoise , you wont be disappointed !



Low Carb / Keto Leek and Cauliflower Soup.

Ingredients:


1- Large head of Cauliflower

2- Large leeks

1- Yellow onion

2- Cloves of Garlic

1-Tsp white pepper or to taste

1- Pinch nutmeg

1- Quart chicken stock or broth

½- Cup white wine

1- Cup heavy cream

1- Bay leaf

1- Sprig of thyme

Light olive oil or Ghee

3- Tbsp. butter

1- Small lemon


Preparation:

Cut dark green tops from leeks and set aside. Cut light green and white parts in half, wash thoroughly and slice thinly.


Dice Onion and set aside.


Remove core from cauliflower and cut into equal size florets.


In a large stock pot or Dutch oven, over medium heat, heat oil and add sliced leeks, onions, white pepper, thyme and bay leaf cook while stirring, sprinkle with salt and sauté till tender and translucent.

Add Garlic and sauté for one minute more .


Add wine and raise heat to high till wine mostly is cooked away.

Add chicken stock, cream, cauliflower and pinch of nutmeg. (Fresh grated is best).

Bring to a simmer reduce heat and simmer till cauliflower is tender ( If needed add a little water to come up to all cauliflower but not to much. )


Meanwhile wash some of the green tops and thinly slice. Sauté in oil till tender and set aside.

IMPORTANT !!! Remove Thyme and bay leaf . THEN ,with an immersion blender puree to a soup like consistency.


Correct seasoning and stir in butter and a spritz of lemon juice.



Serve topped with the sautéed greens as a garnish and fresh cracked pepper and finishing salt on top .
