Low Carb / Keto Hamburger Steak with Grilled onions and Red Wine and Mushroom Sauce. 7 net Carbs

This is not your hamburger steak from your local greasy spoon café topped with A1 sauce !

I don't know if a hamburger steak can be considered a classic , but it can be done classically . Pictured above with grilled onions and topped with a red wine ,shallot and mushroom sauce and paired with pan roasted courgetti ( Zucchini ) topped with a tomato and herb puree as a side . Lets just say its a classic in the making !


Low Carb / Keto Hamburger Steak with a Red Wine and Mushroom Sauce and Caramelized Onions.


Ingredients:


Serves 4


1 ½ pound ground beef 80/ 20

2- Large yellow onions thinly sliced

8 oz. Mushrooms chopped

1- Shallot minced

1- Cup dry red wine

4- Tbsp. cold butter

Light Olive oil or Ghee

Powdered Garlic

1-sprig of fresh thyme

1-Tbsp Veal Demi-Glace (More than Gourmet brand) available through Amazon.

Salt and Pepper.


Preparation:


In a mixing bowl break up ground beef and season with salt, pepper and garlic powder. This is to taste, so stir and take a spoon sized portion to cook in a skillet on the stove top to taste, repeat till the seasoning suites you. Form into four equal sized patties being careful not to over work the meat, lightly form. Note a beaten egg may also be added as a binder. set aside


In a skillet over medium heat pour a Tbsp of oil ,add in onions and turn to coat, light salt and pepper, slowly cook to caramelize stirring occasionally.

At the same time begin the sauce. In a non-reactive sauce pan melt 1 Tbsp. of butter over medium heat, add shallot and cook for 1 minute, add mushrooms and sprinkle with salt. Continue to cook till mushrooms render their moisture and begin to brown. At that point add wine and a Thyme sprig reduce till wine is ½ cooked away. Add Demi-glace , stir and when fully incorporated set aside.


Set aside onions and sauce to finish before service


Cook Hamburger patties according to your preferred method either grill, grill pan, or skillet, to the doneness you prefer. Just do not press and mash out the juices like some people feel compelled to do!


When the patties are done cover and remove to a warm oven to await service

At this time re-heat onions and sauce on the stove top. To finish the sauce bring up to a simmer adding a little water if it is too thin. Remove from heat stir in remaining 3 Tbsp. of butter.

To plate lay down a layer of onions, top with a hamburger and spoon some sauce over the top of burger and serve, Garnish with parsley if you would like.
