This is an absolutely delicious must make recipe use my tomato sauce recipe or find a low carb store bought alternative ether way this dish is a classic!
Low Carb, Egg Plant Parmigiano Florentine
Ingredients.
1- Large eggplant cut into six ½ inch slices discarding the tops and bottoms
1- Cup cooked spinach
1 ½ cup all-purpose almond flour breading, see recipe
Olive oil cooking spray
½ Cup +/- Low Carb tomato sauce
Italian 5 cheese blend
Mozzarella cheese fresh or grated
Italian herbs
Chopped fresh Basil
Preparation
Place Eggplant slices on paper towels and salt both sides with kosher salt then cover with paper towels and put a weight on the top like a cutting board or sheet pan, After 30 minutes remove eggplant slices and set aside
Preheat oven to 400 degrees.
Beat eggs in a shallow dish and put all purpose breading into another. Coat eggplant in egg wash then coat with breading mixture, place on a lined baking sheet and spray both sides of now coated eggplant with olive oil cooking spray to facilitate browning.
Place baking sheet into oven and set timer for ten minutes. At ten minutes turn and bake for another ten minutes. Remove and set aside, turn oven heat down to 350 degrees
In a baking dish spread a small amount of tomato sauce over bottom, but not too much, place down the first eggplant slice and top with a tsp of tomato sauce, then ¼ of the spinach mixture and cover with cheese sprinkle some Italian herbs over cheese the repeat with the next layer.
Then Top second layer with last piece of eggplant and top again with tomato sauce and top with Mozzarella cheese and place in oven for 30 minutes or till all the cheese is melted and mozzarella starts to brown slightly .Last few minutes you may need to cut on the broiler but watch carefully so as not to burn anything
Remove from oven, place on a warm serving plate and dot with a little warm extra tomato sauce as well as spoon extra hot sauce around the base, sprinkle with a chiffonade of Basil and serve
