Low Carb / Keto Creamed Spinach 8 total 5 net Carbs

A delicious classic side dish particularly for roast meat of any kind , method is important here as the sauce must be thickened apart from the use of a roux and depending on reduction only , therefore the sauce and spinach are cooked separately and combined in the end for a final delicious preparation . Low carb creamed spinach


2lbs (32 oz.) fresh spinach, blanched and water removed

1- Small onion finely diced

1- tbsp. butter

1- clove of garlic

¼ - cup of chicken stock

¼ cup with wine or vermouth

1- clove

1- pinch of nutmeg

¾ -cup of heavy cream

2 oz- low carb cream cheese

¼ -tsp white pepper

½ -tsp lemon juice

1-small pinch cayenne pepper

¼ cup chopped artichoke hearts, drained (optional)


In a large Pot with a steam basket bring 1 inch of water to a rapid boil place spinach in steam basket and steam till the spinach is tender and a dark green remove spinach and allow to cool till all heat is gone and is no longer hot to the touch.

Place spinach in a clean cotton dish towel twist into a ball and squeeze as much water out of cooked spinach as possible into a bowl and save the liquid to go into the reduction “Note this is very important fir the quality of the final product “

Remove Spinach from towel and give a rough chop with a kitchen knife and set aside . Can be done a day ahead of time.

In a sauce pan over medium heat melt butter and sweat onions till translucent adding a little salt and pepper during the process , “ do not brown “ . Once translucent add garlic and cook for I minute more.

Once that is done add wine , chicken stock ,spinach juice and a single clove, raise heat to high till stock and wine are reduced by at least half.

Remove clove, add cream, cream cheese and reduce heat to medium low, dissolve cream cheese into cream. Add nutmeg, lemon juice, white pepper and cayenne pepper.

Simmer till sauce thickens and becomes like a pan cake batter add salt and pepper to taste

Once reduced stir in spinach and artichokes” if using “till just warmed through. Do not overcook as the spinach will become watery, correct seasoning and serve
