What can I say ,a simple classic . Will require a little extra effort but the payoff is huge . A special treat for family or friends or just treat yourself . Bon Appetite !
Low Carb Chicken Cordon Bleu
Ingredients
2- Medium hormone free chicken breast
Sliced Swiss or Gruyere cheese
Sliced Black forest Ham
1- Cup low carb schnitzel breading
1- Cup plain almond flour
Dijon mustard
2- Large eggs
½ Tsp baking powder
Salt and pepper
Preparation
Preheat oven to 400 degrees
Dissolve the baking powder into a tablespoon of water, then beat into the egg wash and combine, set aside.
Between two pieces of cling wrap place the chicken breast after moistening both sides first with a little water, smooth side down.
With a meat mallet or heavy bottom pan pound the breast to an average 1/8 inch average thickness .
Removing the top sheet of cling wrap salt and pepper escallop and brush lightly with mustard.
Place a slice of ham then cheese centered on the escallop if they are thin enough double the ham and cheese .
Gently roll up the escallop tucking in the sides as you go and then wrap tightly with the cling wrap placing in the refrigerator it stiffen up.
Set up your dredging station with the egg wash, schnitzel breading and almond flour in separate dishes.
Gently unwrap chicken roll dip the cutlets into the egg wash and then into the schnitzel flour coating evenly. Then back into the egg wash and into the Almond flour and set aside.
Coat a heavy bottom pan with light olive oil or ghee and over medium heat till the oil begins to shimmer , but do not let it smoke.
Place the breaded roll seam side down and brown lightly turning to get all sides.
Placing on a sheet pan and put into the oven for 15 to 20 minutes till a thermometer inserted into the center of the roll reads 165 degrees.
Remove and serve .
