As an alternative to the white riced cauliflower , This browned riced cauliflower, brings a new depth of flavor to any dish . Yes its a little extra work but its well worth it , The roasting concentrates the flavor and gives a nutty sweet flavor to the cauliflower that goes well with any meat or robust fish like salmon.

Low Carb keto Browned Riced Cauliflower.
1- Head of cauliflower make four servings.
2- Tbsp. minced parsley
Salt and pepper.
3-Tbsp Olive oil and or butter
Preparation.
Method one.
Pre heat oven to 400 degrees
Using a box grater or a food processor with a grating blade, grate cauliflower into rice sized pieces.
In a microwave proof bowel put riced cauliflower and three tablespoons of butter or olive oil.
Cover and microwave on high for five minutes.
Remove from microwave stir coating cauliflower with the oil or butter, and spread out evenly over a sheet pan and place in the oven for 25 to 30 minutes, stirring occasionally till the cauliflower browns to your liking, remove to a serving bowl, stir in parsley, salt and pepper to taste and serve.
Method two
Preheat oven to 400 degrees
Cut cauliflower into florets, in a mixing bowl toss florets with salt and pepper and olive oil completely coating the florets.
Spread out onto a sheet pan and roast in oven, turning occasionally till the florets brown nicely, remove to cool completely
Put cooled florets through a food processor equipped with grating attachment and process.
Turn riced cauliflower into a microwave proof bowl cover and microwave for three minutes.
Remove stir in parsley, butter or oil and salt and pepper to taste

Alternately you can reheat riced cauliflower in a sauté pan with butter or oil giving it a fried quality
