Low Carb / Keto Sauce Béarnaise 2- carbs .

This cousin of Hollandaise , Béarnaise sauce is always a delicious addition to steak , poultry , fish and vegetables. Packed with flavor from a tarragon , chervil , shallot , pepper , white wine , vinegar and enriched with butter and egg yokes. Truly a low carb classic , you will not regret taking the time to make this sauce .



Low Carb / Keto Sauce Béarnaise

Ingredients.


For the reduction .


¼ -Cup white wine vinegar .

¼ - Cup dry white wine.

¼ - Cup of water.

1 - Large Shallot minced.

2 - Teaspoon of peppercorns rough cracked .

1-Tablespoon minced fresh tarragon or ½ tablespoon of dry tarragon.

½ - Tablespoon dried Chervil ( optional and available on amazon ) .

For the sauce .


3 – egg yokes .

1 – Tablespoon water.

1- Tablespoons of heavy cream .

½ - Cup clarified unsalted butter ( traditional ) or regular butter melted and warm.

2 -Tablespoons of minced fresh parsley and tarragon combined.

¼ - Teaspoon cayenne pepper ( optional ) .

Lemon juice as necessary.

Salt to taste .

Preparation.

To make the sabayon.


Combine ¼ cup white wine , ¼ cup white wine vinegar , ¼ cup water in a sauce pan over high heat along with the shallots , peppercorns. tarragon and chervil bring to a boil and reduce to two tablespoons .


Strain pressing out liquid from the ingredients.


Using a double boiler or a stainless steel mixing bowl, add egg yolks , reduction , cream and beat together .


Place mixing bowl over the boiling water and cook the egg yokes while constantly whisking .


The eggs will become foamy and begin to thicken , remove from heat source as necessary .


When the eggs thicken into a light custard remove from heat and cut burner off .


To finish the sauce.

Place the sabayon back over the water with the heat off and drizzle in warm melted butter incorporating as you go as with making a mayonnaise ( essentially this is a warm mayonnaise ) .

Once the all the butter is incorporated stir in the tarragon , parsley and cayenne pepper if using .


Taste for salt and season to taste add some lemon juice to brighten the flavor if needed .

Keep warm till service , but be careful don’t let it simmer or it will break .
