Inspired by Risotto Milanese , This riced cauliflower dish is creamy , cheesy and delicious . The saffron gives it a delicious taste and beautiful color. This will pare well with any meat or fish and I think especially roasted chicken or turkey, Very easy to make !

Low Carb Keto Riced Cauliflower with Parmesan Cheese and Saffron .
Ingredients :
1- Head of Cauliflower
1- Cup heavy Cream .
1- Cup grated Parmesan Cheese.
3 – Tablespoons of butter
1- Pinch of Saffron .
2- Tablespoons Chives or Parsley.
Nutmeg .
Salt and pepper to taste .
Preparation:
In a small sauce pan add cream , grate in some nutmeg and add a pinch of saffron bring to a simmer and keep warm.
Cut cauliflower into florets and grate in a food processor using the grating attachment . Or you could use a box grater.
Place into a microwave safe bowl add a little salt and pepper and the butter and microwave on high for five minutes .
Once cauliflower is done and while its very hot stir in parmesan cheese and saffron cream mixture .
Salt and pepper to taste , garnish with chopped chives or parsley.
Serve while hot , Note: to re heat use microwave so it will not become watery .
