Low Carb / Keto Oeufs en Cocotte. 2 net Carbs as pictured

Eggs baked in a ramekin with cream and herbs. Pictured here topped with cherry tomatoes roasted at the same time the eggs were baking. This recipe works well anytime , breakfast , lunch or a light dinner . Serve with crispy bacon for dipping



Low Carb / Keto Oeufs en Cocotte.


Ingredients:


2- Medium to small eggs.

1- Tablespoon heavy cream

1-teaspoon of butter

Chopped chives, parsley, basil or herbs of your choice

Sea salt

Cayenne pepper

3 inch ramekin of each serving and roasting pan or deep dish pie pan for the Bain Marie


Preparation.


Pre heat oven to 350 degrees and put a kettle of water on to boil

Rub inside all over with butter

Pour 1 tablespoon of cream in to each ramekin.

Lightly sprinkle with salt and pepper

Break two eggs into each ramekin

Sprinkle with a pinch of cayenne pepper and add a dot of butter or two.

Place roasting pan on a rack in the middle of the oven, and pour in hot water to a depth of ¾ inch.

Bake for 12 to 15 minutes or till the whites are set and the yokes are to your liking


Carefully remove each ramekin to a serving dish, garnish with a pinch of sea salt, fresh herbs, sautéed mushrooms, or roasted tomatoes and a slice of crispy bacon
