Low Carb / Keto Meatloaf. 1 net Carb per serving.

Ok well some times you just want a meat loaf , and this is a delicious one at that !. With only 1 net carb per serving " based on 10 servings" it will work well with a keto diet . Serve with Cauliflower puree https://www.cheftylermacon.com/post/low-carb-keto-cauliflower-puree and Green Beans and you have a low carb classic American dinner!




Low carb / keto meatloaf


2-lbs Meat loaf grind, Beef Veal Pork or 80 / 20 ground beef.

1- Small large or two small onions small dice

1- Tablespoon butter

3- Cloves Garlic minced

1- Green or red bell pepper small dice

1 Tablespoon fresh thyme or 2-tsp dry thyme

5- Basil leaves chopped or 1 tablespoon dry

2-ribs celery small dice

2-Teaspoons tomato paste

2-cup small diced mushrooms

¼ -cup dry white wine

1 ½- Teaspoon kosher salt.

1-Teaspoon black pepper

4- Eggs

2-Tablespoon fresh minced fresh parsley

½ Teaspoon smoked paprika

¼ Teaspoon allspice

¼-Teaspoon cayenne pepper or ½ teaspoon red pepper flake

1- Tablespoon Worcestershire sauce

2- Cups low carb tomato sauce (see recipe) or low other low carb tomato sauce of your favor

Preheat oven to 350 degrees

On paper towel place diced mushrooms and sprinkle with salt toss.


Preparation:


Over medium heat combine celery, onions, bell peppers, and thyme with melted butter and sweat till translucent and the thyme gives off its aroma.


Add garlic and tomato paste and cook for a minute or so more, once done add a splash of wine or water scraping up any collected brown bits, remove from heat and set aside to cool.

Transfer mushrooms into a clean dish towel and ring out as much water as possible and then combine onion, celery and bell pepper mixture.


In a large mixing bowl combine all other ingredients (except tomato sauce) along with celery and onions once cool and mix thoroughly.



On a greased baking pan or lined with parchment paper form the meatloaf into a uniform loaf and spread the sauce uniformly on the top 1/8 inch thick and place into a 350 degree oven until internal temp reaches 150 degrees (35 to 45 minutes), remove from oven and scrape away grey gunk that has collected around the meat loaf and brush all over with tomato sauce. Return to oven and cook till internal temp reaches 165 degrees, (about 10 minutes more).

Remove from oven to cool slightly, slice and serve, with a dollop of warm tomato sauce.


The recipe calls for free forming the meat loaf on a lined sheet pan , but if you have a spring form loaf pan it works really well . I am sure you can find one on Amazon .
