Low Carb / Keto Crispy Pork Belly , 0 Net carbs.

Pork belly is perhaps one of the best Keto foods , nice combination of protein and fat . It is after all what Bacon is made of . It can be roasted or braised , here we wrap it up and slow roast at low temp , then chill and finish in a sauté them till really crispy on all sides " Delicious "

Here the pork belly is being serve over a celery root puree along with slow roasted tomatoes and braised red cabbage and fennel , those recipes are poster on this site as well.


Low Carb / Keto Crispy Pork Belly


Ingredients

:

1 1/2 pound pork belly, skin removed .


Season generously with salt, pepper, a dash garlic powder and a touch of cayenne pepper .

- Wrap in foil and roast for 5 hours at 200 F.


- Chill, cut into serving sized pieces , cut cross hatch into the fat cap .


In a sauté pan , add a splash of olive oil or better ,bacon drippings place pork belly fat side down and set heat for medium , slowly render the fat cap till crispy , then do the same on all sides.


Serve while hot .




If cooking Sous vide ( my preferred method ) cook at 150 degrees for 24 hours
