Low Carb / Keto Classic Quiche Lorraine. 4 net carbs per serving

Bacon , Cheese, Cream, Butter and Eggs ! What's not to love about this recipe and at only 4 net carbs per serving you can have it on a strict keto diet . Roasted cherry tomatoes 1 carb each if added as a garnish .



Low Carb – keto Classic Quiche Lorraine.

Ingredients:


For the crust.


2 –Cups Almond Flour.

1/3- cup melted butter.

1- Egg.


For the custard.


8- 10, slices of bacon fried crisp and crumbled.

1- Teaspoon fresh Thyme.

1 ½ - Cup gruyere cheese, Swiss, or combination of both.

6- Large eggs.

1- Cup heavy cream.

½ Cup unsweetened, coconut milk.

1- Teaspoon salt.

½ Teaspoon pepper.

Pinch of Nutmeg.

Dash of red pepper.


Preparation:


Preheat oven to 350 degrees.


In a food processor, combine almond flour, egg, melted butter and pulse to combine.

Grease the inside or a tart or pie pan with butter and press in the dough as thin as possible across the bottom and up the sides.


Prick the bottom over all with a fork. Place in the fridge as you make the custard.

Combine eggs, cream, coconut milk, thyme, nutmeg, salt, pepper and red pepper, whip all ingredients together and set aside.


Scatter half the cheese and bacon across the bottom of the tart pan and pour in custard to within ½ inch of top of crust. Then add remaining custard to within ¼ inch of top of crust.

Bake in oven for 35 to 45 minutes or till top is lightly browned and the custard is set. You can check doneness by inserting a toothpick and it comes out clean.


When done remove to a cooling rack and allow to cool for 30 minutes.


Garnish with some extra thyme or parsley, cut and serve.


You can serve room temp or gently re warm in the oven.
