Made with our low carb pickled vegetables ,this easy to make Chow Chow Vinaigrette is a prefect condiment for so many dishes. See our recipe for Sauté of Salmon with Spinach as an example.



Low Carb / Keto Chow - Chow Vinaigrette.


Ingredients:

1 – Cup pickled vegetables, see recipe at .https://www.cheftylermacon.com/post/pickles-that-s-right-easy-pickled-vegetables-that-make-a-delicious-side-for-any-meat-or-as-garnish

1- Shallot minced.

1- Tablespoon extra-virgin olive oil.

1 – Tablespoons pickling liquid.

2- Teaspoons minced chives

Juice of ½ Lemon.

2- Teaspoon whole grain mustard.

Kosher salt.



Preparation:

Remove the pickled vegetables from the jar and coarsely chop. Place in a bowl with mustard, shallot, olive oil, and pickling liquid, and mix gently with a plating spoon. Add a squeeze of lemon juice, season with salt, and stir to combine. Garnish with chives
