Dandelion Green and Tuna Salad. 8 net Carbs.

This is a simple salad using dandelion greens and canned tuna . Dandelion greens are very healthy and I found these at Earth Fare , but you can pick your own and the flowers are edible as well , just be careful where you pick them so they are free of pesticides .


Low Card Keto Dandelion Green Salad.

Ingredients:

3- Cups chopped dandelion greens.

2- Boiled eggs or steamed eggs, halved

1- 5 oz. can of tuna in olive oil

4 – Oz cherry tomatoes

4- Oz pitted black olives

2- Tablespoon mayonnaise

1 – Tablespoon capers

1 – Pinch cayenne pepper or chili powder

1- Tablespoons olive oil

1- Tablespoon balsamic vinegar

½ Cup sliced red onion


Clean and chop the dandelion greens and place in a mixing bowl.

Add in vinegar and olive oil, toss to coat, season with salt and pepper.

Arrange greens in a salad bowl. Place Tuna in the center of the arranged greens with the olive oil it was canned with.

Spread onions around the tuna and place tomatoes, black olives and eggs on top of onions around the tuna.

Season with salt and pepper.

Place mayonnaise on top of tuna and garnish with the capers and cayenne pepper.

Serve for two people.
