Low Carb / keto Schnitzel, 1 net carbs

This Schnitzel recipe uses Coconut flour Breading in place of regular flour and bread crumbs . Baking powder is used in the breading mix and egg wash to create a crisp fluffy crust . Add a creamy mustard sauce to make it even better !


Low Carb Veal or Pork Schnitzel.

Ingredients.

2- Boneless pork or veal cutlets, Pork Tenderloin may also be used.

2- Eggs or 1 jumbo egg for dredging.

1- Cup coconut flour Schnitzel breading “recipe below “.

Light olive oil or Ghee and a nob of butter as needed “ note light olive is for frying but is not low fat “.

Salt and fresh cracked pepper.

½ Tsp baking powder.

Lemon wedge and German mustard of your choice.


Low Carb Coconut Flour Breading for schnitzel.

Ingredients.

1 – Cup Coconut flour.

2- Tsp baking powder.

1-Tsp garlic powder.

¼ Cup Parmesan cheese.

2-Tbs minced Parsley.

Preparation.

Combine and mix thoroughly.


Preparation of Schnitzel.


Dissolve the baking powder into a tablespoon of water, then beat into the egg wash and combine, set aside.

Between two pieces of cling wrap place the cutlet after moistening both sides first with a little water.

With a meat mallet or heavy bottom pan pound the cutlet to an average ¼ inch average thickness.

Dip the cutlets into the egg wash and then dredge in flour mixture evenly coating both sides and set aside.

Cover a heavy bottom pan with a layer of oil and then over medium high heat, bring oil to temp, shimmering but not smoking. Note do not allow the oil to smoke as the coconut flour may burn.

Gently place the cutlets into the oil and pan fry till the breading takes on a nice light brown color.

Then as the cutlet starts to stiffen up turn. Add butter and baste the turned cutlets with the melted butter.

Once the cutlet is springy to the touch remove and place on a paper towel to absorb any excess oil, blotting any off the top.

Serve right away with course ground mustard on the side and a slice of lemon .
